Say goodbye to the Maison du Danemark’s snack shop and its dark rye bread and salmon sandwiches for busy white collar types. Entirely remodeled by the GamFratesi duo, the space has been turned into a luxe bar, with marble, curtains that change color as they move and Nordic furniture. And of course, Cyril Delbod, stationed behind his impressive green marble bar to serve you… Maybe a high-end specialty, like the very fresh Siren (aquavit, cucumber, basil, lemon, apple juice, €12) or a garrigue-scented Rubis (gin, lime, homemade beetroot syrup, thyme, egg white)? And to snack on: the inevitable assortment of herring (€22), salmon rillettes (€12), etc. For Viking captains, there are a few alcohol-free cocktails on the menu (€8) as well. // A.B.
