And of course, Cyril Delbod, stationed behind his impressive green marble bar to serve you… Maybe a high-end specialty, like the very fresh Siren (aquavit, cucumber, basil, lemon, apple juice, €12) or a garrigue-scented Rubis (gin, lime, homemade beetroot syrup, thyme, egg white)?
