Feeling like playing kache-kache? Head on over to this speleo-bar with two vibes, tucked deep underground in the 1st arrondissement. But let’s start with the ground floor where, behind the tiny wooden bar, Nils Schacherer (ex-Avek and Sherry Butt) receives the crowd with his “vermuteria,” an original selection of some sixty vermouths that you can enjoy over ice or with tonic water – including a Belgian Forest white vermouth with woody notes (€6), and a floral Italian Carlo Alberto red vermouth (€7). Then what? Head downstairs to the vaulted cellars with padded couches and peacock blue armchairs, at the back of which you’ll find an authentic cocktail bar. There are seven well calibrated recipes on the menu, including an earthy Bissap Lover (Select infused with pink peppercorns, juniper, hibiscus syrup and tonic water – €10) or a more biting Cardini – sherry, Calvados, amaro infused with cardamon (€10). There are mocktails available upon request (€7) and, for snacking, honest goose rillettes and wild boar pâté (€6). // A.B.
