At the back of La Mina, a dimly-lit little cellar hidden underneath the buzzing Carbon, Sébastian Gans (ex-Candelaria) and Thomas Girard (ex-Gravity Bar) have dedicated themselves to impressing their patrons. Their cocktail list, which still needed a little bulking up when we last visited, tackles the mixomaniac trend head-on with seven signature drinks, each one a little gem crafted with an eye for detail. Take their daiquiri (€14) for example, a carbon-colored elixir (served in a white glass) that’s intensely smoky (rum infused with carbonized pineapple skin, black molasses, lemon), or the Hokusai (€14), a stunning wave of bitter blue-green liquid (sake infused with klamath algae, Beefeater 24 gin, vermouth, tea).
