In the shadowy tiny basement space with arched ceilings of La Mina, tucked away below the glowing grills at Carbón, Tristan Rainteau (ex-Mary Celeste) is paving new ground with sustainable cocktails. His minerals? Elixirs de la casa plus a few small producer spirits, transformed into seven sleek creations. They include a tangy Cleared (Pink Pepper gin, clarified grapefruit juice – €14 though!) or an earthy Fresh Peat – Michel Couvreur whiskey, Armand Guy absinthe, Lustau sherry (€13). It’s worth noting that for all those who abstain from alcohol, there are no mocktails on the menu, but there is hibiscus kombucha (€6) or homemade ginger beer (€5). // A.B.
