Red paper lanterns hung from the ceiling, charred wooden walls, delicate chinoiseries…. In his trippy temple to cocktails, Sacha (ex-Nobu in London) dedicates his shaker to the pleasure of the most experienced lips and tongues in town. That evening, in our glass, an umamiesque Kyoto Elixir, made with coriander-infused vodka, elderberry flower syrup, pink grapefruit juice and cherry tomato juice. Never lacking in inspiration, this talented man carves his ice cubes into diamonds, serves bacon-infused bourbon, gets out his power drill or vapes a sweet perfume over his creations…. And his exquisite (jade green) dim sums (€6.50) with hakao shrimp (powder pink) or with chicken, coconut and huète (bright red), his delicate beef tataki and vegetable tempura served on floral bamboo, and his fried dumplings (€12.50) are perfect bar companions. The cuisine is so carefully made that you’ll want to switch things up and pair your cocktail to your dish, like crispy five-spiced duck. For those with a sweet tooth: tempting Japanese tapioca with coconut milk, smashed banana and chocolate ganache or rice balls with sesame, yuzu sorbet and a coconut broth (€6.50).
