Spend two days at Chassignolles! In this picturesque village inn, the owner, Englishman Peter Taylor, welcomes in guests every season, with a new chef to enliven the summer months in Auvergne. Seated in either the vintage dining room or the big, bucolic terrace, you might run into regulars like Action Bronson, Bertrand Grébaut, Pierre Jancou or Dennis Paphitis. This year, it’s a chef from New Zealand, Mike Hazlewood (ex-Attica in Melbourne), who will be delighting travelers with rustic cuisine made using the best local ingredients (vegetables from the garden, meats from the region), washed down with the world’s finest natural wines – including those of Aurélien Lefort, Auvergne wine-grower, who will be there on Saturday evening for a unique tasting! As for the sleeping quarters, it feels very much like a family home (antique furniture, timeworn wood) with the luxurious added touch of Aesop toiletries for hair and body. In short, it’s the kind of jaunt out to the countryside that you rarely get to do anymore, with the village bells tolling throughout the day, dips in the Champagnac-le-Vieux lake and long bike rides – there are 5 at the Auberge.

And on Sunday, on the drive back home, stop off in old-town Clermont-Ferrand for lunch at Le Saint-Eutrope, the excellent bistro from chef Harry Lester (Le Guide Fooding’s Best Bistro of 2015) and favorite of Le Fooding’s founder.

- Friday: pre-dinner drinks and dinner from 6.30pm, night at the Auberge de Chassignolles
- Saturday: local produce brunch from 9am to 1pm, dinner with tasting menu from 8pm, night at the Auberge de Chassignolles
- Sunday: breakfast from 8am at the Auberge de Chassignolles, lunch from 1pm at Le Saint Eutrope
