Clémentine Garret serves all sorts of multifaceted galettes from the tiled bar of her flour-laden den: thin Armorican-style buckwheat crepes, flaky Indian paratha-style flatbread, or plump pita bread, each of which can be stuffed with your choice of the house’s seasonal fillings – like the one with slow-roasted pork belly, fresh herb cream and pickled onions, or perhaps spiced and marinated eggplant beignets with roasted carrots, plus plenty of tahini and chutney. Pair it all with tzatziki served with buckwheat chips or beetroot salad glazed in tonnato sauce, before rounding out your meal with an intriguing farz buen, a sort of scrambled crepe, served here with lemon curd and some Fontainebleau on the side. // Ninsu
