Lan Nguyen and Regis Strikker are always smiling! The day we went for lunch, Kyro was packed full of hipsters and government employees, all of whom were salivating over the well-made Japanese-style sandos, while listening to the hip-hop and R&B playlist. The best of the best? The Fried Chicken sando, made on two slices of milk bread and stuffed with homemade hot sauce, marinated red cabbage and a generous slice of perfectly fried (katsu) chicken, also available as a beef, tuna or vegetarian version. And for the Noodle Bowl, Regis uses his own spice mix inspired by a Japanese recipe, plus crispy fried pork chops, Chinese cabbage, marinated red cabbage, spring onions and a marinated egg. // Peter Vandenberghe
