Badaboom! Ramdam has arrived in Paris: a noisy spot brought to life by Damien Rosière and Axel Gicqueau, who have been friends since grade school, and who, once night falls, get the party started and pump up the volume. The setting? Lots of red, white and blue tones, a bistro dining room space, a shiny bar and a banquette corner. There, chef Léo Giorgis (who sharpened his knives over at Apicius) stitches together small plates with the flavors of the day: a lovely roasted eggplant with lemon thyme cream, za’atar, pomegranate and fresh herbs; a virtuous chorizo cream with crispy bacon and cilantro; a clever croque monsieur made on brioche with baked ham, raw milk Emmental cheese, caramelized onions and Plantin truffle oil; a well-made meagre tartare with citrus and pickled celery… To end the meal, there was a very delicious chocolate mousse made with olive oil and fleur de sel; roasted pineapple, coconut whipped cream and lemon balm; or a pavlova with white peaches, chamomile and linden honey. // Albert Gredinbar
