Inside this gastronomic den (atmospheric light fixtures, blonde wood tables, zero tablecloths) in the shade of the Prado, the intrepid Alexandre Mazzia plays captain for taste buds seeking out atypical sensations. Behind his immaculate bar, the unkempt scientist explores the dreamy marine world with a scalpel, bringing his tableaux to life. The other night the €170 menu featured: a fabulous spoonful of grey shrimp over katsuobushi (dried, smoked bonito flakes); his emblematic chocolate and smoked eel dish; a magic potion of sake and smoked milk sprinkled with trout and salmon roe; very fine semolina with orange blossom and briny horseradish; crisp peas that were sweet as candy, beautifully glistening with saffron and grapefruit butter; before a smoked chocolate triptych (crumble, cream, broken bits) and turnips with bacon for the high voltage conclusion to the meal! // N.K.

FEELING THIRSTY? A rigorous but expensive menu: a late harvest Gewurztraminer from Valentin Zusslin (€13 a glass); Les Benoîtes, a noble Chassagne-Montrachet from the Domaine Sorine (€145 a bottle); or a lesser-known organic Marsannay red from Sylvain Pataille (€84).
