Another winning hand for the aces of the pop-up restaurant scene! After their successful Hôtel Nord-Pinus spot and Le Chardon, the talented Paris Pop-up team (Laura Vidal, Julia Mitton and Harry Cummins) is tripling down with Chiringuitoin central Arles, an open-air neo-Mexican restaurant, decked out with sombreros and vintage décor. Located in the Espace Croisière between an ephemeral bookstore and the temporary Rencontres d’Arles exhibit, the trio plans on spicing up your life with their hearty tapas, like the “poicamole,” a version of guacamole made with organic chickpeas grown by Philippe Guichard, served with homemade tortilla chips; the stunning chilled beet and carrot soup with cubed feta and shiso leaves; divine tacos (veggie or lamb, €6 and €8) topped with fresh cilantro, pickled onions and salsa verde; then, for a dessert that’ll leave you with goosebumps, try Emki Pop’s plain strawberry sorbet, it’s out of this world! And to wash it all down, there are no fewer than fifteen artisanal mezcals to choose from, carefully selected by Niki Nakazawa (alias Mezcal-Niki), like this druidic liqueur from Sosima Olivera Aguilar, produced in 50 liter barrels (€12 for 30 ml). And don’t forget about their brazen cocktails, including the Savage Detective combining Vida, Yaguara cachaça, chamomile liqueur and Celery Bitters (€12). // Goulven Le Pollès
