Say goodbye to Chez Fifi (former Robuchon chef Philippe Braun’s restaurant) and hello to Colette! “Founded one Thursday in 2019” reads the menu crafted by Alexandre Bourany (the former right-hand-man of Christian Constant at Le Bibent), which pays homage to his grandmother Colette’s cooking… In a space with blue and white tones, globe light fixtures and modern furniture, the Jura-native cooks up stylish dishes. In exchange for 25 bucks, lunch the other day was a fine demonstration of his talent: a delicious spinach, button mushroom, artichoke and slivered Parmesan salad; lovely hake from Saint-Jean-de-Luz on a bed of Puy lentils with bacon (a little too salty); before the very simple yet very delicious dessert, a Melba-style yellow peach. At night, Colette raises the bar even higher: butternut squash velouté with smoked paprika and chestnuts; roasted veal with coco de Paimpol beans, chanterelles and parsley, a passion fruit and milk chocolate shortbread with a lime jelly and vanilla ice cream… // P.L.
