Overlooking Palombaggia Beach, Laurent Santoni’s chic, rustic spot (waxed concrete, whitewashed walls, exposed rafters, a wooden terrace) delivers the best pizzas and grilled meats in the region. The secret to his success? Loyal staff who have been working there for twenty-some years, and, manning the wood-fired oven, chef Denis Mandin! Tested and approved the night we went: a stunning pizza with tomatoes, mozzarella and a parsley dressing – the one with Parmesan cream and shaved white truffles is another stunner; naughty spice-glazed pork ribs served with tasty pan-fried vegetables and potatoes – or a Corsican veal chop that was very good as well; before a flawless tiramisu from pastry chef Arnaud Le Gall. // G.LeP.

FEELING THIRSTY? Resolutely independent wines: a Figari white from the Domaine de Petra Bianca (€6 a glass), a Figari rosé from Le Clos Canarelli (€29.50 a bottle), a Patrimonio white from the Domaine Orenga de Gaffory (€46) or a Calvi red from the Domaine Maetracci (€91 for a magnum).
