Le Guide Fooding’s Best Pizza of 2016
Why does this kitsch pizzeria have all of Marseille scrambling to get a reservation? Thanks to its iconoclastic owner, Mahéva, who serves up a pure slice of Marseille life at both lunch and dinner – plus a good dose of boozy late nights! Not to mention the sacrosanct pizzas made by her man, using organic Italian flour (the dough is matured for 24 hours and kneaded by hand) and impeccable ingredients: Castellano mozzarella from Aix-en-Provence, buffalo mozzarella, Parmesan, sun-dried tomatoes… Tested and approved the night we went, after a decent bronzing session in the wood-fired oven: the Manon, with mozzarella and a basil-infused tomato sauce for the base, topped with Parmesan and sun-dried tomatoes after coming out of the oven; the Papé, with the same base but sprinkled with anchovies; and the eponymous pizza that combines tomato sauce, buffalo mozzarella, basil and olive oil. You can skip the desserts though! And make sure to bring cash, because they don’t accept cards. // J.G.
