Tucked away above the Hossegor Lake is the best apéro spot in the entire Landes department. But it’s not much of a secret to the locals – oyster farmer Fabrice Lorenzi’s La Cabane and its immense terrace with sunset views is always jam-packed from 6pm onwards. Seated at a big table or at the bar, you can slurp back the freshest oysters imaginable (€10 for a dozen n°3); whelks and shrimp with aioli or Bayonne ham (€6.50 a plate); and rillettes from Daniel Benedet with walnut bread (€8). Pair it all with a white wine or rosé from the southwest: €2.50 for a glass of Colombard Villa Grand Cap produced by Lionel Osmin and €14 for a bottle of Imperatrice rosé from Tursan. Cash only. // C.D.
