Legend has it that a young Parisian woman set up shop in this medieval city. And in the kitchens of this beautiful Béarn house (rustic tiling, exposed rafters) disconnected from time and social media, she crafts beautiful, locavore plates. After verification, we can confirm that this Parisian well and truly does exist: her name is Laura Schiffman, she works as a private chef and she knows a thing or two about cooking. For us, the day we went for lunch: a summer salad of watermelon and haricots verts that had just been harvested, with almonds and labneh – or cherry tomatoes, raspberries, pesto and a fig leaf oil; incredible white beans cooked in a tomato sauce, with grilled eggplant, sweet chilies and fresh goat cheese for the vegetarian option; before an ultra-gourmet Fontainebleau with roasted figs, hazelnuts and a thyme syrup. // C.Do.
