Olivier Labarde has been running this Nice institution for over 30 years now. At his mecca for natural wines, he delights fans with a selection of over 300 labels and enhances (good) ingredients to serve cheeky seasonal cuisine. For us, the day we went for lunch: a delicious poached sausage that was grilled and served with herbed potatoes and a mustard cream sauce – or truly outstanding linguine with red kuri squash cream and pancetta; before a delicious greengage tart. At night, the space transforms into a small paradise for apéros amongst friends, with delicious tapas (sadinillas, anchovies…), aged cheese and charcuterie plates, mozzarella with almonds and preserved lemon, or even fresh goat cheese from Bonifassi. // LS.
