Does Xavier Bousquet have a lucky number? Not satisfied with opening up a place on 7 Rue Campagne-Première, the same place where Michel Poiccard (Belmondo) died in Breathless, this Sète-native chose the former spelling of his hometown for the name of this plush bistro (big mirrors, padded benches, tableclothed tables). The Japanese chef Keisuke Mizuguchi (ex-Toyo) stitches up very meticulous menus here. The day we went for lunch: a cheeky beef tongue carpaccio topped with sprouts and sauce gribiche; delicate pollack from Le Guilvinec, with steamed Romanesco broccoli, thyme and smoked bacon; before an honest dark chocolate mousse served with matcha ice cream. At night, other very fine plates can be gleamed off the €48 menu: a mushroom velouté; grilled Iberian pork chops, jus de cuisson and braised endives; plus figs roasted in Pinot noir with pistachio ice cream, etc. // D.C.

FEELING THIRSTY? There are organic-centric wines: a Sancerre white from Vincent Gaudry or a Côtes-du-Rhône red from Matthieu Barret (€8 a glass), a Quincy from Sylvain Bailly (€40 a bottle), a Burgundy red from Dominique Laurent (€45)…

PRICE: Menus €30-38 (lunch) and €48 (dinner), à la carte €56-74.
