Right next to his flashy Bistro du Cours, Laurent Biaggi turned the adjacent shop into a cool, little, clean-wine bar. As the day draws in, nibble on small unfussy plates while seated at the bar, on the terrace or in the space in the back, while Mother Nature’s blood flows freely in your glasses. Our laidback evening consisted of: creamy panisses; a fragrant brie and thyme tartine; confit little tunny from the South of France topped with crisp vegetables; tender tuna belly in a healing seaweed broth. Seen (and lusted after) on the next table over: a lovely asparagus velouté drizzled with lemongrass essential oil, and a beautiful veal tenderloin with a broad bean, peanut and shallot condiment. // N.K.
