Already the owners of L’îlot Bar, friends Flo and Sylvain convinced their buddy Ben to establish this new nest with them – and it’s been quite the success! Going by the name of Oiseaux (or “birds” in French), their atmospheric bistro (moulded ceilings, bricks, a kitchen-bar, musical instruments for lights) sends out joyful eats made by Lucas Tricot. Served à la carte the other night: seasonal grilled white asparagus with slivers of smoked haddock and a beer-infused hollandaise sauce; tender beef skewers marinated in garlic and lime, with sautéed potatoes, shiitake mushrooms and nasturtium flowers – or, for the vegetarian equivalent, caramelized turnips, semolina, mint and a red cabbage cream; before a gourmet financier with lavender cream and an orange blossom espuma. // M.F.
FEELING THIRSTY? There’s an (apparently organic) wine list that was still being finalized when we visited. Otherwise, there are craft local beers, organic Pajottenlander fruit juices (€3 a glass) and cocktails named after birds, like the Blue Bird (curaçao, orgeat, lime, rosemary and gin, €7) or the Etourneau (rum, lime and ginger beer, €7).
