Les P’tits Fayots

Restaurant Les P’tits Fayots in ToulouseLes P’tits Fayots (Toulouse) - © Pierre Beteille

At 8 o’clock on the dot, the curtains are pulled back to reveal the polished décor of Les P’tits Fayots – an open kitchen, interplay of materials, copper suspension lamps, multicolored chairs… Thirteen minutes later, once you’ve gobbled up the amuse-bouche (a miniature bass tartare with turnips, citrus and watercress), dig your molars into chef Aziz Mokhtari’s playful tasting menu (“Première approche,” €46): crisp green asparagus, a warm béarnaise sauce, porc noir bacon, trout roe, oxalis and a pistachio-Parmesan crumble; pearly-white langoustine on a bed of juicy peas and green onions with a vanilla emulsion; a tender beef fillet (marinated for three days in soy sauce and star anise) drizzled in a gourmet anise-flavored beef sauce; before a more classic dessert combining Gariguette strawberries and a lemon cream. The wines strike the right tone: Etincelle, a Crozes-Hermitage from the Domaine Saint-Clair (€6.50 a glass), a subtle Collioure red from the Domaine du Traginer (€40 a bottle) or a charming white Sancerre from Claude Riffault (€60). Menus €24 (lunch) and €46-53 (dinner). // M.F.
