Where can you run into Manu Payet, Sarah Andelman, Aure Atika and Roschy Zem? At Mar’Co, the reincarnation of Colette’s Water Bar. The concept? Take the same people (i.e. Marc Giami and his stylish team) and give them a fresh start! Just 85 meters down the street from the original location, the interior has a clinically clean feel (white walls, neon lights, mirrors to admire yourself in) that’s warmed up by tweed banquettes. The menu parades out all the same eats that could be found at Colette (pasta gratin, steamed green vegetables with goat cheese), alongside a few specialties from the neighborhood: Sébastien Gaudard croque monsieurs, Caesar salad with a Costes dressing, and an unstoppable 0% fat cheesecake from Jean-Paul Hévin. // J.G.
