Don’t judge this place by its name: you won’t find any petit jaune or soggy peanuts here! On the contrary, Pastis is an utterly stylish space, all stone, iron, blonde wood and smoked glass… Simply put, it was one of the very first neo-bistros in Montpellier, where fine foodies come to rub shoulders with Daneil Lutrands’s (ex-Bras in Laguiole) beautiful compositions. The other day at lunch, his three-course menu (€38) included: perfectly flash-seared bonito served as sashimi over julienned yellow zucchini, energized with a light agastache emulsion; roasted guinea fowl supreme with an explosively flavorful coffee and black olive condiment, plus pan-fried chanterelles, toasted hazelnuts and Iberia ham; before a cone filled with fresh raspberries and figs, a fig mousse and shiso ice cream – an absolutely heavenly, intense finale! // G.LeP.
