Waxed concrete floors, a turquoise wall, copper light fixtures and a new name…. Anne and Nicolas Bouchard – a thirty-something couple in love with Latin America and local ingredients – are the duo behind the former Bayonne Café’s radical facelift. The other day at lunch, for 19 bucks: delicious marinated anchovies and leeks with a magical vinaigrette, shredded nori and nettle powder; excellent pan-fried baby squid caressed with salsa verde, plus quinoa electrified with rocoto chili and thinly sliced mushrooms; before an incredible chocolate lava cake with meringue, summer berry coulis and marigold petals. At night, the former Le Meurice sous-chef really goes wild: Bolivian sopa de mani with foie gras; a half duck breast prepared with squash and a Mexican mole sauce… // P.L.
