A restaurant in the 6th arrondissement that serves everything raw – who would have thought it? In a space with minimalist décor (blond wood tables, grey banquettes, atmospheric suspension lamps) that’s loyal to the spirit of the first location on Rue de Turenne, William Pradeleix (ex-Will in the 12th arrondissement) is heating up his Left Bank concept working with raw fish, meat and vegetables. The day we went for lunch, brought over by a server who unfortunately was just as raw as food: a lovely veal tataki with broad beans and a sesame-Granny Smith apple condiment; Charolais steak tartare with truffles; sea bream ceviche with pickled mango and flying fish roe; a delicious mullet sashimi with celery, peas and raspberries; crisp haricots verts under a lime cream; before a chocolate-sesame cake refreshed by black sesame ice cream. // E.D.B.
FEELING THIRSTY? There are organic heavy wines: a Vouvray from François Pinon (€10 a glass), a Pic-Saint-Loup red from the Château La Roque (€39 a bottle), a Pomerol Château Gombaude-Guillot (€90), etc. Plus a few cocktails (€10) and mocktails (€6), like the Orangocayen, mixing citrus, turmeric and chilies.
