The second spot from the Auvergne duo, Jérôme Bru and Romain Billard (chef and sommelier respectively at B2K6 in Lempdes), Smørrebrød feels like a Scandinavian boutique hotel: light wood, modern furniture, paper sculptures… On the plates, however, things start heating up! And curiously, there’s not so much as a hint of those famous rye tartines, the Danish specialty that the establishment is named after… The night we went, the small menu featured: Cantal and buckwheat seed croquettas that melted in the mouth; perfect marinated trout on a tender squid ink waffle with wasabi, crisp radishes and beets; delicious Norwegian Atlantic cod with cauliflower and a flavorful smoked cod roe emulsion; before an exceptional Weiss chocolate shortbread with salted caramel ice cream that’ll have you weak in the knees. // N.B.
