Paoli Pasquale has been found! After the restaurant that bore his name closed, the illustrious Corsican chef took over a tourist hotspot at Ile-Rousse beach. Served à la carte the other night: an insanely good tomato gazpacho seasoned with a secret herb pesto (their lips are sealed in Corsica!) – far superior to the under-seasoned tomato salad served with an average sheep’s milk cheese; followed by perfectly cooked meagre fillet atop a tasty ratatouille; before some excellent roasted apricots topped with a chestnut crumble. One piece of advice? Before reserving, make sure to ask if Paoli is still in the kitchen, because he enjoys stepping out from time to time… // G.LeP.
FEELING THIRSTY? There’s a concise wine selection: a rosé from Stéphane Bertolozzi in Oletta (€5 a glass), a white from Simon Giacometti in Saint-Florent (€25 a bottle), a Balagnas red from the Domaine Maestracci (€30).
