Who would have thought it? The most Parisian of wines bars has Svante Forstorp from Sweden tucked away inside of it! Seen everywhere buzzy (from the former Achille to Aux Deux Amis, with a stint at Vivant Cave along the way), this (vi)king of cool blows hot and cool air amongst supernatural bottles selected by the boss Clovis Orchin. Seated at the long, untreated wood bar with a view of the kitchenette where rap music plays loudly in the background, enjoy his exhilarating tapas every night: a magnificent black truffle deviled egg; rather Nordic potato-herring croquettes; delicious chicken liver and pea tartines; addictive cacio e pepe arancini; freshly made pita with sautéed mushrooms and pesto; really crispy fried chicken; luxurious yakitori with cecina; Saint-Nectaire cheese that’s good for your soul… // J.D. & J.L.
