After taking his leave from the pharmaceutical industry, Gilles Tessie now prescribes his gentle remedies at Yuman, a post-modern spot done up in concrete, untreated wood and cotton light fixtures. On the menu, you’ll find the winning formula of healthy eating – seasonal, locavore, vegetarian, lactose- and gluten-free dishes. For us, on the set lunch menu: a very fresh zucchini gazpacho with cilantro; roasted mackerel fillet with apricots, bulgur wheat, roasted carrots and zucchini; plus, for dessert, a soy milk panna cotta or a kiwi tart. As for the wines, life goes on organically: a red from Mas Romanin in the Alpilles or a Coteaux-du-Languedoc blanc from L’Ancienne Cordonnerie (€6 a glass, €25 a bottle). Otherwise, there’s a beautiful collection of freshly made juices (orange, carrot and ginger) for €4.90. Set menu options €17.50 to €21.50 (lunch), appetizers €6.50 and mains €15.50 à la carte. // A.B.
