Say goodbye to galettes! Hubert Niveleau was tired of working the Breton bilig in his buckwheat palace, so decided to change up the general vibe of the place. The result? After cleaning up his HQ for the occasion (waxed concrete floors, metro tiling on the bars, globe light fixtures), the lovely boss has concocted some inventive recipes made on good buns from Union Boulangerie. His insider’s deli will fill you up in exchange for a ten-euro bill: toasted brioche buns generously filled with the works and sliced in half, starting with the pastrami version that also includes three layers of cheddar, red cabbage, romaine lettuce, cucumber and chipotle mayonnaise, paired with delicious potatoes in chimichurri sauce or spicy coleslaw. Hungry for more? There are a few mains that you can devour in house (hearty butter chicken curry, rice and beef, etc.), and even a soup of the day (sweet potato, carrot, celeriac and coconut milk the day we went).
