At Will’s Deli, there’s Will, a jack-of-all-trades entrepreneur who fell head over heels for American-style pastrami while traveling through Montreal with his wife, Isabelle; there’s also Simon, his eldest son, a young ad exec and event planner; and Sacha, his youngest son, a journalist and cyclist. In their shop on Rue Poissonnière, they keep busy serving hungry customers who’ve come from faraway for authentic pastrami sandwiches made by Will with his branded Will’s Smoked Meat: a sublime toasted sandwich filled with veal pastrami, copious amounts of cheddar cheese and honey mustard on challah buns made by a baker friend of the family; or a Gravlaxiste sandwich made by Simon with salmon gravlax, homemade pickles and beet carpaccio. For something on the side, there’s latkes, hummus, shakshuka and desserts of the day, like moist brownies, cheesecake or carrot cake. // James Patisson
