“In order to be tasty, a pigeon needs have lived a happy life.” That’s the motto proudly displayed in entrance of the Anézo family’s boutique, which you can verify yourself while admiring the huge aviaries that house three thousand couples of cooing residents, raised in the open air, fed grains from the farm and killed without unnecessary stress. The Mesquer pigeons are exported to Michelin-starred restaurants (La Mare aux Oiseaux, Le Castel Marie-Louise…) and available in house, prepared by Rémy and Matthieu, who are never lacking in inspiration – rillettes with foie gras, gizzards or thigh confit, tajines… Unless you’d rather go all out at the estate’s restaurant, La Volière, which cooks up grilled pigeon sausage, pigeon gamekeeper’s pie, pigeon tartare or pigeon carpaccio, and even a pigeon burger! // Thomas Jossin
