After Pages and 116, the French-Japanese chef Ryuji Teshima has added a new best-seller to his collection with Pages Blanches, a pastry shop/tearoom for gourmet diners in need of inspiration. At this elegant cake shop (rough brick walls, immaculate furniture and bar), his pastry chef Kaori Akazawa puts her spin on all the classics, adding a Japanese touch to each of them that’ll have even the most incredulous guests’ mouths watering: an intense yet surprisingly light matcha-yuzu Saint-Honoré, creamy vanilla or matcha flans made on caramelized shortcrust pastry, a striking lemon meringue tart decorated to look like a daisy, a delicate and comforting strawberry-fig charlotte… Devour them all in house with a cup of genmaicha tea made with toasted rice, and then turn the page!
