Alice Demongeot and Bertrand Berrie packed their bags, boxed up their Parisian Balibert on Rue d’Hauteville and moved it down to Toulouse. Their boutique, which began first and foremost as an épicerie, evolved into a sandwich shop during France’s national lockdowns, specializing in carefully-sourced grilled cheese sandwiches. That’s the concept they exported to the Pink City, using bread from the Péché Mignon bakery, ham from Castet and cheeses from the Xavier creamery. The result? Four plump toasties, including a Complet (ham, Comté, mushrooms, baby spinach, crème fraîche, chives), a special of the week (taleggio, pickled zucchini, arugula and lemon), in addition to the Classique and Veggie options. Along with a bowl of roasted eggplant with chermoula, bulgur wheat and yogurt, and Alice’s famous dark chocolate and fleur de sel cookies. // Auguste Marie
