Born with a chocolate spoon in her mouth, Jade has been referred to as the “daughter of” Monsieur Genin from the start of her career. She recently left her father Jacques’ famous chocolate shop in order to refine her own chocolate sensibilities in an elegant white and gold space just a stone’s throw from the Opera Garnier. What will you find on the immaculate counters? Her signature pyramid-shaped chocolates with ganache filling (oat, hazelnut, tamarind, nori, cream of coconut or even za’atar), along with graceful rocher-like chocolates studded with malted wheat, and chocolate or nut spreads that are almost too thick to spread but delicious to nosh on, including an outstanding pistachio, crushed macaron and fleur de sel combo – also available as solid squares. It’s all prepared using a single-origin Honduran chocolate bean, which is sweetened sparingly and sourced straight from the producer. // Jean Pascal
