That’s the challenge Arthur Viot set himself, who’s experimenting with innovative ways to dry preserve fish without losing any of the freshness and quality of his Celtic seafood at this shop in the Marché Saint-Germain. Come get your fill of the following from his sparkling stand: gigantic soles, brill, redfish, turbots and plaice, either whole or filleted, rare Cherbourg salmon, shellfish, including some exquisite flat Bélon oysters and cupped grand cru La Pompadour de Quiberon oysters, excellent smoked seafood from Maison Lucas, fine tuna and sardine saucissons… The best part? The house also offers tastings, so you can savor grilled fish, carefully selected langoustines and steamed shellfish under the market’s arched ceilings, along with a bottle of natural wine from a nearby vendor! // Jean Pascal
