It’s raining bread on Place Colignon! After stints in Montreal, London and Sydney, Antoine Martinot headed home to knead his dough at Soleil Bakery. His signature product? Sourdough bread made exclusively with organic Belgian heirloom flours produced in limited quantities, and a mastery of old-fashioned techniques. On the shelves of his nano-bakery: crispy spelt wheat and eight-seed loaves, bronzed white flour bread, or loaves pimped out with olives, walnuts, sesame seeds or poppy seeds. And if you’re in the mood for something sweet, there aren’t any pastries, but there are outstanding bressane brioche buns and cardamom buns, which you’ll devour down to the last crumb! // Monica Noli
