Celestial heights at Papillon (Paris)

For the 31st, Le Guide Fooding’s 2017 Best Coming Out award winner is pulling out all the stops with scallops shot through with bottarga, pearly brill that’s drunk on Champagne, and truffled yellow capon…. All included in their extra luxurious €220 menu (+ €75 with food and wine pairings).

Practically free at La Nautique (Narbonne)
Looking for a good deal on New Year’s Eve? Head to Pascal Serres and Carole Peyrichou’s excellent bistro (awarded Le Guide Fooding’s Best Portside Bistro of 2017) and celebrate the New Year for a steal. What kind of ammunition do they have in store? Small fried fish, foie gras infused with Rivesaltes wine, cod with cranquettes (small green crabs caught in the Étang de Bages)…. Menu €40.

Wild times at 6 Paul Bert (Paris)
We weren’t able to convince Beau and Emil, the talented duo who just arrived in the kitchens of 6 Paul Bert, to reveal their full menu. But we can promise you that there will be caviar, foie gras and other mystery ingredients cooked up with a twist by these two former Noma chefs. Menu €150 (not including wine!).

Take away at L’Idéal (Marseille)
The ideal New Year’s Eve? For Julia Sammut, the owner of L’Idéal and winner of the Fooding d’Amour 2017 award, it takes place at home, with the best products from her shop: smoked eel from the Mey family in Holland, foie gras made by her mother (with the delicious “Pomme Givrée” cidre de glace) and demi-deuil-stuffed young chicken with Stilton cheese!

Bistrorgasmic fun at Les Plumes (Paris)
At chef Kazuhiro Fujieda’s brand new bistro, who used to work at L’Arpège and Le Chamarré, New Year’s Eve celebrations will be both classic (in terms of the ingredients) and off the wall (in terms of the recipes): smoked scallops with a mascarpone/passion fruit espuma; plancha-grilled langoustines with finger limes; lamb chops with kombu…. An enchanting evening at Les Apothicaires (Lyon)
Running Les Apothicaires – which earned Le Guide Fooding’s Best Sophistroquet award of 2017 – Tabata and Ludo haven’t finished winning us over with their take on the culinary arts…. Included in their Saint Sylvester’s Eve menu? Scallops with parsley root and a sea jus, lightly smoked duck foie gras with a tamarind paste, sunflower seed risotto with white Alba truffles and coffee, etc. Menu €95 (+€35 with food and wine pairings).

A classy affair at Daroco (Paris)
At Julien Ross and Alexandre Giesbert’s impressive strato(ria)sphere (winner of Le Guide Fooding’s Best Décor award of 2017), we’ll celebrate the New Year in fine company: lasangette with mushrooms and a capon consommé, steak with truffle sauce, a half-sphere of gianduja chocolate with a raspberry center…. Menu €150 (drinks included).

A traditional feast at L’Entre Deux (Biarritz)
A pot-au-feu terrine with foie gras, scallops in a vichyssoise broth, chicken with a Albufera sauce… You’ll find all these extremely classic delicacies at the Basque-Landais chef Rémy Escale’s Biarritz bistro, L’Entre Deux, which was one of Le Guide Fooding’s absolute favorite spots of 2017. Menu €100.
