Datil

Idolized wherever she wanders, the epiphyte chef Manon Fleury already shined at Mermoz and Le Perchoir, and from pop-up to pop-up. Finally, here she is, coolly planting her roots in a trendy space all of her own, complete with white tablecloths and fresh-cut flowers. With her alter-chef Laurène Barjhoux, horizontally leading a young team (almost) without guys, the chef demilitarizes the brigade and brings plants to the plates where only a hint of animality remains, like an extra in the background, just acting as a condiment. Gramme

We’ll say it loud and proud: Gramme rocks! In their tiny coffee shop with timeworn tables, azulejo tiles by Karla Sutra and bouquets of dried flowers, Marine Gora (ex-Universal) and Romaine Tellier (ex-consultant) deal out homemade seasonal cuisine. Read more.

Plan D

Comfortably tucked away behind their graph-paper tile facade, Alice Tuyet (ex-Patate podcaster) and Christian Story are challenging all your preconceived notions about vegetarian food with their veggie sandwiches! While waiting to open their plant-based bistro, you can find them at Plan D, putting on a festival of bready treats near the Canal Saint-Martin, where chef Joris Lebigot (ex-La Scène and Le Bristol) stitches together bright meals on olive oil bread made by Frédéric Lalos. Faubourg Daimant

Not content with having mastered plant-based grub canalside with Plan D, Alice Tuyet and her merry veggie collective have headed deeper into the faubourgs and renovated a Belle Époque house (marble tables, plush velvet banquettes, Art Nouveau light fixtures, an atelier windowed wall). In the kitchen, chef Erwan Crier’s (ex-Royal Monceau) creative juices (or rather, sauces) are free-flowing, and they’re the common thread that binds together the menu that’s vegetarian as always. Sapid

Once upon a time there was a chef with twenty Michelin stars to his name… Reigning over this solid gold collection of restaurants is French celebrity chef Alain Ducasse. The latest addition to his culinary arsenal? Sapid, a eco-conscious restaurant that preaches the gospel of zero-waste, plant-based and affordable cuisine, imagined hand-in-hand with Romain Meder and executed by the Peruvian chef Marvic Medina, both of whom used to work at the Plaza Athénée. Daily Syrien Veggie

Don’t mind the meat hooks on the tiled walls, because despite being housed inside a former butcher’s shop, Daily Syrien’s third location is 100% vegetarian! On its five tables that are always full, all kinds of well-made mezze file out at both lunch and dinner: deliciously sweet feta cigars, extremely fresh labneh, lentil purée, za’atar-sesame-thyme galettes with hummus for dipping, delicious foul – a warm broad bean and chickpea salad. Aube

Tomorrow, at aube (aka dawn)… or even this morning! Not that it was collecting dust, but Audrey Jarry and Jean-Charles Buffet decided to revamp their cheeky bistro, the aptly-named Buffet, transforming it into a luminous neo-seventies eatery (patchwork tiling, a vermillion red bar, Bernard Villemot posters). Bare walls, visible vegetable crates and old-fashioned china… You’ll feel right at home at this eatery run by Alexia and Florent Artis, a couple who switched careers in order to serve simple, homemade cuisine. Plus, this neighborhood café is the perfect remedy for indecision, with just two appetizers, two mains, two sandwiches and three desserts a day, all prepared using whatever’s fresh at the market.
