Once upon a time there was a chef with twenty Michelin stars to his name… Reigning over this solid gold collection of restaurants is French celebrity chef Alain Ducasse. The latest addition to his culinary arsenal? Sapid, a eco-conscious restaurant that preaches the gospel of zero-waste, plant-based and affordable cuisine, imagined hand-in-hand with Romain Meder and executed by the Peruvian chef Marvic Medina, both of whom used to work at the Plaza Athénée. In this neo-refectory that brings together big marble-topped bistro tables and connected spaces, we nibbled on all of the following the night we went: grilled corn with yogurt, chili and lemon zest; loco-local coco de Paimpol beans paired with radishes braised on the BBQ and smoky yogurt; a very chic Ebly – spelt wheat cooked in a Dutch oven in a hay-infused broth, paired with roasted carrots and onions, all that served with a delicious gluten-free rice flour bread from Chambelland. Then, for chocolate lovers, a chocolate mousse pimped out with cocoa nibs and roasted cubes of chocolate croissant (also from Chambelland). Worth mentioning: much of what’s featured on the menu can be purchased to go in the house’s well-stocked pantry section (chili cream, rosehip chutney, homemade kefir, unfiltered olive oil, Ducasse chocolates, etc.). // Josh Pieczenik
FEELING THIRSTY? Served by a futuristic machine, there are a few wines available by the glass (a Burgundy Passe-tout-grain Taupenot-Merme or a Rhone white from the Domaine Vallet at €7) and the bottle (L’Instant Tannay, a Loire white for €25 or a Crozes Hermitage from Natacha Chave for €22), along with kombucha and homemade kefir (€5 and €3).
