Let it pop! Lionel Huetz, a naval architect, and Emmanuel Bouheret, a singer who left the world of opera behind for that of apéro, watch over an impressive collection of 300 labels of Champagne and sparkling wine in their long boutique on Rue Condorcet. Bubbly everywhere you look, patiently waiting for the fun to begin, including L’Arbre, a subtle pinot meunier from Vincent Cuillier (€56), Les Galipes, an elegant blend from Coulommes produced by Jean Servagnat (€45), a complex rosé from Jérôme Coessens (€65)… or even a classic sparkling Italian blanc de blancs produced by Nicola Gatta, aged on lees for 50 months (€45). Pop one open in-house for an additional €10 or €15 corkage fee, and wash it down with some luxurious snacks: Bellota ham, additive-free Iranian caviar, cured wagyu from Maison David… And to add to the fun?
