Georges? It’s a reference to Georges Cazeaux-Cazalet (1861-1911), the former mayor of Cadillac, who was a longtime defender of local viticulture and who gave his name to this medieval village square. That’s where you’ll find the old town hall/elementary school that was transformed by Éléonore Colinet. In its current iteration, it’s an épicerie, wine shop, hardware store, coworking space… and a cozy restaurant with an imposing fireplace, hardwood floors, wooden rafters and a terrace on the peaceful square, managed by Camille Favain (with the wines) and Thibaut Monnerie (in the kitchen). Chosen the night we went from the happy and well-traveled menu that was sourced as locally as possible: a very graphically pleasing and flavorful ebi katsu (shrimp cutlet) shaped like a cylinder and streaked with smoky tonkatsu sauce, over a bed of celery chiffonnade; followed by slices of flash-seared swordfish with tikka spices, fried chickpeas, cos lettuce, over crispy naan bread; before an audacious dessert of bleu d’Auvergne cheese revisited as ice cream, paired with tangy nectarines and fried walnuts. // Raoul Taburin
