Watch out, Hugo Loubert’s about! The man behind the ever-popular Laundromat is making a big bang with Tambour, located the next door down. He brought along six knives, a few dozen vinyl LPs and hundreds of natural wine bottles, rescued from the cellar and scattered about the jumble of second-hand tables, wooden shelves and stacked apple crates. Among the beauties on display: La Table, a pinot noir from the Domaine de Montaillant in the Nièvre (€22 a bottle); CC, a blend of Auvergne chenin and chardonnay from Patrick Bouju, who needs no introduction (€20); and Constance et Clémentine, a folle noir vinified by the Domaine de Vinceline, a true beacon in the sulfite night of the Bellet appellation (€39.50). Grab a bottle to go or enjoy on the spot (for a €9 corkage fee), while lounging in the old Chesterfield armchair or gathered around the farmhouse table. Pair with a few small plates whipped up by Hugo himself: cecina de León (€12), eggplant al ragú (€10), mullet gravlax with raspberries (€10), or steak tartare and button mushrooms (€10). The added bonus? The fine foods corners stocked with top-notch pantry staples, like Le Coste olive oil, Codesa anchovies from Spain and honey from Rucher Saint-Léger. // Alban Mont
