This historic dive in Auch anchored solidly in place across from the covered market has been given a natural wine makeover! Behind this major transformation is a couple bound by their love for wine, who just moved here from Brussels: wine merchant Malvina Rhami and sommelier Virgil Boyer. Now on the agenda, you can expect things like a Pin’eau de Loire from La Famille Vaillant (€5 a glass), a Burgundy Aligoté from Vini Viti Vinci (€27) or Plein les Ceps, a Rousillon Grenache from La Cave Apicole (€19), along with many other naturalist labels – including a few impressive names, like Yoyo, Frédéric Cossard, La Sorga or Les Foulards Rouges. Pair them with a menu of the day at lunch during the week, and, at night and on the weekends, tapenade, deviled eggs or sausage galette. Things are really heating up in Auch! // Auguste Marie
