THE STORY: After getting their hands on Le Trésor (a B&B that they opened when they first arrived in the Languedoc in 2005), the English couple Tilly and William wanted more space to raise their young children. Located 30 minutes from Carcassonne, Le Domaine de Capiès consists of a farmhouse and four small summerhouses that have been transformed into luminous gites with wooden rafters, whitewashed walls and white couches. The grounds aren’t lacking in charm either: an organic vegetable patch, chickens wandering about and, during the summer, pizzas cooked in a wood-fired oven and barbecues next to the pool from time to time. Starting at €650 a week, for two. Brunch on Sundays upon reservation: €20/person.

TOILETRIES: Goat milk soap, REN body lotion and shower gel.
INTERNET: Wifi (free).
BREAKFAST: Tea, coffee and homemade jam is available, and they deliver viennoiseries upon request on Sunday mornings.
MINI-BAR: No, but there is an Honesty Bar, Le Barn, which has a selection of local wines (Domaines Begude, Gayda, Laurens), artisanal BDQ beers, organic lemonades and juices produced in the region.
LITTLE LUXURY: The 20-meter-long salt-water pool, where you can go for a dip while admiring the stunning views of the vineyards and hills.
