It’s already been a decade since Sébastien Pompele began stocking up on the best southwestern France has to offer in his Toulouse wine shop. If natural wine spots now abound in this city (especially since the Covid era), the owner, who has built strong relationships with winemakers over the years, remains a reference point in the field. The other day, he recommended Les Ricochets to us, a promising red from the Domaine des 4 Pierres (€9-14 depending on the vintage), along with Coupe Soif, a fluid fitou from the Domaine Mamaruta (€14.50), La Compagnon, a lovely corbières from the Domaine Ledogar (€15) and Le Trouble Fait, a white blend produced by Marc Barriot (€17). Also seen on the wooden shelves next to the old piano: Les Bonnes Blanches 2018, a Loire chenin from the Mosses (€36), along with a few artisan spirits, like the Bear Brothers vodka (€48 for 500 ml) or the fabulous Garrigue gin from La Theriaque (€52). // Gwen Jacquère
