Olivier Gaudry owes his love of fresh, handmade pasta to his Tuscan grandfather, and he shares this passion at the local markets, while awaiting the opening of a brick-and-mortar shop. Meanwhile, he’s keeping the people of Toulouse happy with organic, Sicilian durum pasta: spaghetti like you’d get in Italy (€10/kg), tender pappardelle (€10/kg), sublime ravioli stuffed with pesto fresco (€4.50 for 100 g), and polpette al sugo (€32/kg).
