THE STORY: High on the Aubrac plateau, the prominent Suquet – Maison Bras’ flagship restaurant – already boasted an exceptional modern hotel. A few kilometers down below, in the village of Laguiole, there’s now a B&B to keep it company: Val d’Aubrac, a traditional building (local grey stones, a flagstone roof) renovated by Sébastien and Véronique Bras, with an ultra-contemporary “less is more” feel. There’s three beautiful minimalist bedrooms done up in tones of white, a fully equipped kitchen, a big fireplace that you can chill in front of, and a terrace overlooking the spectacular indoor/outdoor pool with sleek lines. €1,320 for two nights (for 6 adults and 3 kids), €4,140 for the week.
