Nadir Benbernou? He’s the king of smash burgers! In this narrow joint near the opera house, where his team is hard at work stuffing buns, the self-taught burger lover serves a mean “classic,” featuring a juicy Parthenaise beef patty ground daily and sourced from Philippe Leto, who won the Best Artisan of France award in 2016. The beef then gets topped with melted cheddar cheese, caramelized onions, mustard and ketchup, all housed within a soft homemade potato bun made with Foricher flours. Also approved in our book: the Avocababa, prepared the same way but topped with avocado and a special sauce. If you want a vegetarian option, there’s a breaded cauliflower patty topped with cheddar, pickles, red onions, salad and the special sauce, or even a minimalist grilled cheese sandwich.
