An azure blue bar and ceiling, rope guardrails, high wicker chairs, lobster traps hung from above, palm tree wallpaper…. Decorated by Mamam (the creator and founder of Honoré), the new address of Monsieur Giribone, the former owner of Le Bistrot d’Edouard (Le Guide Fooding’s 2009 pick for Best Bistro) is a beautiful tiki-chic bar. Where the talented Ben Colombani, the former bartender at Le Connaugt, puts a twist on the classics: a Japanese Margarita with yuzu and matcha tea; a Moscow Mule with fresh mint, berries and spices; a Gin Sour, very foamy and very green, made with Beefeater 24, apple juice, basil, cucumber and vaporized cardamom, etc. Cocktails €10-12. Mocktails prepared “depending on his mood” for €8. And the snacks were still in the works when we visited. // A.S.
